In coffee roasting, first crack is the point at which rapid water expansion causes the coffee beans to audibly pop within the roaster, offering the operator a clue as to her roast progress, and generally marks the place where a coffee would begin to be drinkable. Though it requires much energy input from the roaster, first crack is one of the few exothermic reaction in coffee roasting, when the beans start to produce and give off energy of their own. It is an exciting time in the lifespan of a roast.
